How do you make oven roasted brussels sprouts with garlic?
The Ingredients
- Brussels sprouts– Trim the brussels sprouts to remove the ends of them and any broken leaves.
- Olive oil– Use a good quality olive oil, or extra-virgin, as the flavor really shines through.
- Garlic– The key ingredient. Either freshly minced garlic or garlic powder. I prefer the garlic powder as the flavor is not as intense.
- Salt– To taste.
The Instructions
In a large mixing bowl, add the chopped brussels sprouts, olive oil, garlic and salt, and mix together until combined. Lightly oil a baking tray and place the whole sprouts on top. Roast the brussels sprouts for 20-25 minutes, until they begin to brown on the outside. Remove the sprouts from the oven and serve with your favorite main course.
Flavor variations
- Add parmesan. Sprinkle with some vegan parmesan cheese before adding it to the oven and sprinkle a little extra once it has been cooked.
- Drizzle balsamic. Add 1 tablespoon of balsamic vinegar to the mixing bowl when adding the oil.
- Add vegan bacon. While the sprouts are roasting, pan fry some tofu bacon. Once cooked, chop it up and sprinkle over the cooked sprouts.
- Drizzle maple syrup. Perfect for those who love the sweet and salty combination. Whisk 2 tablespoons of maple syrup with the olive oil before adding it to the mixing bowl.
- Add lemon juice. Add a squeeze of fresh lemon juice to the freshly roasted sprouts.
Storing and reheating tips
- To store: Leftover sprouts should be stored in the refrigerator, covered. They will keep well for up to 3 days.
- To reheat: Either microwave for 30 seconds, pan fry until warm, or reheat in a preheated oven for 10 minutes.

Ingredients
- 1 lb brussels sprouts washed and trimmed
- 2 tbsp olive oil divided
- 1 tsp garlic powder
- 1 tsp salt
Instructions
- Preheat the oven to 180C/350F. Grease a large baking tray with one tablespoon of olive oil and set aside.
- In a large mixing bowl, add your brussels sprouts, remaining olive oil, garlic salt, and pepper, and mix until combined.
- Transfer onto the greased tray and bake for 25 minutes, or until golden and crispy on the outside.
- Remove the brussels sprouts from the oven and serve immediately.
